Carrot, Celery And Parsley Salad With Lemon And Olive Oil

This simple, refreshing salad goes well alongside a browned, hearty meat dish. We also love to use salads like this as a sandwich condiment. You could add any combination of herbs and spices.
4 medium carrots, thinly sliced
1 pound celery hearts, thinly sliced
3 tablespoons fresh lemon juice
3 tablespoons olive oil
1/2 cup chopped fresh parsley
1 teaspoon red pepper flakes

Prep the carrots and celery and combine the slices in a large bowl. Toss with the lemon juice, olive oil and parsley. Stir in the red pepper flakes and season to taste with salt and pepper.
