Sweet Onion Salad

A really good sweet onion like a Vidalia can be enjoyed on its own as a salad with a minimum of fuss. Be sure to use the best quality extra virgin olive oil you have for this dish.
1 Vidalia or other sweet onion, thinly sliced
Sherry vinegar
Extra virgin olive oil
Coarse sea salt
Red pepper flakes

1. Cut the onion in half through the root. Cut off and discard the root and top ends. Peel away and discard the skin and first layer of flesh. Cut the onion lengthwise into very thin slices. (A mandoline works well for this.)
2. Drizzle the slices with sherry vinegar and olive oil. Season them with a sprinkling of coarse salt and red pepper flakes to taste. Eat immediately or marinate the onions in the refrigerator for a few hours.
