Prosciutto, Mozzarella And Basil Pita Pizza

We love to use lavash or pita as pizza crust. It's fast, easy and gets perfectly crispy, especially when you go light on the toppings and really crank up the oven.

2 large slices pita bread (or lavash)
1/2 cup tomato sauce
4 thin slices prosciutto
2 ounces mozzarella, sliced
16 basil leaves, sliced
red pepper flakes
prep: 5 minutes
total: 25 minutes

1. Preheat the oven to 500F and put the rack in the middle position.
2. Slice the pita bread open and separate the top and bottom into 2 pieces. These will be your two crusts.
3. Lay the pita inside up on a baking sheet. Brush the top with olive oil and spread half the tomato sauce evenly over each piece. Use just enough of the sauce to evenly coat the pita. Arrange the mozzarella slices over the tomato sauce and sprinkle with red pepper flakes.
4. Put the pizzas in the oven and cook until the cheese is bubbling and melted, 5-10 minutes.
5. Remove the pizzas from the oven and top immediately with the prosciutto and torn basil leaves. Drizzle with more olive oil.
