Shallot-Thyme Drawn Butter
makes about 1/4 cup
Drizzle this simple flavored butter over poached eggs, brush it on toasted bread, or serve it alongside steamed vegetables or lobster. If you want the butter to have a glossy, unclouded look, substitute 1/2 cup of clarified butter.
1 stick unsalted butter
1 medium shallot, finely diced
2 teaspoons chopped fresh thyme leaves
1/4 teaspoon kosher salt
1/8 teaspoon red pepper flakes

total: 10 minutes

Place all ingredients in a small saucepan over medium heat. Cook until butter is melted, stirring occasionally. Remove from the heat and serve warm.
