Curry-Yogurt Dipping Sauce
serves 2-4
This is a great dipping sauce for vegetables. Make up a big platter of artichokes, blanched green beans, red peppers and sliced carrots and enjoy the tang of the yogurt and subtley sweet spice of curry.
2 tablespoons vegetable oil
1 tablespoon curry powder
1 cup plain yogurt
2 tablespoons mayonnaise
prep: 5 minutes
total: 10 minutes

Heat the vegetable oil in small skillet over medium-high heat. Add the curry powder and cook, stirring occasionally, for 2 minutes. Pour the oil and curry into a bowl to cool. When the oil has cooled, whisk in the yogurt and mayonnaise.
