Cucumber-Red Onion Salad With Yogurt And Mint

serves 2-4

This is a quick, refreshing salad. Cucumber and yogurt are a natural match. Red onions ground the salad with earthy pungency, and fresh mint completes the flavor spectrum. Seed the cucumber if you want to -- we don't mind the seeds unless the cucumber is really big.

ingredients

2 medium cucumbers, thinly sliced
1/2 red onion, thinly sliced
10 fresh mint leaves, chopped
1 cup plain yogurt
1 teaspoon red wine vinegar
1 teaspoon extra virgin olive oil

instructions

1. Prep the cucumber, onion and mint.

2. Pour the yogurt into a large bowl. Stir in the red wine vinegar and olive oil. Add the red onion, cucumbers and mint and toss together with a sprinkling of salt and pepper. Chill the salad until you’re ready to eat.
