Avocado, Sweet Onion And Grapefruit Salad

serves 2-4

The combination of onions, avocados, and grapefruit may seem odd, but try it - the sweet onions and tangy grapefrut are both softened by the silky avocado.  And they create a beautifully colorful plate too.


1 medium Vidalia or other sweet onion, thinly sliced and chilled
3 tablespoons olive oil
1 tablespoon white wine vinegar
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 large grapefruit, segmented
1 avocado, sliced
1/2 head butter lettuce, pulled into large leaves

total: 15 minutes

1. Prep the onion and put the slices in the refrigerator while you work on the rest of the salad. Whisk together the oil, vinegar, salt and pepper and set aside.

2. To segment the grapefruit, slice a little of each end off. Holding the fruit over a bowl to catch juice, start at one end and use a small, sharp knife to peel around the fruit in a spiral motion. You want to get as much of the pith off as possible, but try not to cut too much into the flesh of the grapefruit. Next, remove each segment of flesh by making two cuts just inside the membranes that holds all the segments together.

3. Prep the avocado and lettuce. Arrange the lettuce on two plates. Divide the onion, avocado and grapefruit evenly among them and drizzle the salad with the vinaigrette.
