The combination of onions, avocados, and grapefruit may seem odd, but try it - the sweet onions and tangy grapefrut are both softened by the silky avocado. And they create a beautifully colorful plate too.

1 medium Vidalia or other sweet onion, thinly sliced and chilled
3 tablespoons olive oil
1 tablespoon white wine vinegar
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 large grapefruit, segmented
1 avocado, sliced
1/2 head butter lettuce, pulled into large leaves
