Citrus Thyme Couscous With Peas And Carrots

This fast and easy flavored couscous makes a great side to just about any beef or chicken dish. The variations on it are endless. Start with a beef broth. Use orange zest instead. Add more vegetables or different herbs. And so on
2 cups low-sodium vegetable broth
1 sprig thyme
2 carrots, peeled and finely chopped
1 1/2 cups frozen green peas
1 cup couscous
1/2 lemon, juiced (1 1/2-2 tablespoons)
1/2 lime, juiced (1-1 1/2 tablespoons)
1 tablespoon lemon zest
1 tablespoon olive oil
prep: 5 minutes
total: 20 minutes

1. In a large saucepan, bring the broth to a boil over medium heat. Add the thyme, then stir in the carrots and cook for 2 minutes. Stir in the peas and cook for 1 minute.
2. Add the couscous, then stir in the citrus juice, lemon zest and oil. Cover the pan and remove it from the heat. Let it sit for 5 minutes.
3. Remove the thyme and pour the couscous into a serving bowl. Stir to combine the ingredients well and season to taste with salt and pepper.
