Shrimp And White Bean Salad With Lemon And Oregano

ingredients

1 1/2 pounds shrimp, peeled and deveined
2 tablespoons olive oil (1 tablespoon for the shrimp + 1 tablespoon for the salad)
4 cans white beans, rinsed and drained
1 tablespoon chopped fresh oregano
1 lemon, juiced

instructions

1. Preheat the oven to 400F. Toss the peeled shrimp with 1 tablespoon of the olive oil and a light sprinkling of salt and pepper. Roast until pink and just cooked through, about 10 minutes.

2. Toss the shrimp with the beans, oregano, remaining olive oil and lemon juice. Add more salt and pepper to taste.
