Broiled Pork Chops

2 boneless pork loin chops
2 teaspoons olive oil
salt and pepper

1. Preheat the broiler to high and place the oven rack about 8 inches below it. Using a meat pounder (or bottom of a pan), pound the chops to an even 1-inch thickness. Coat them with the olive oil and season them generously on both sides with salt and pepper.
2. Put the chops on a broiler pan. Put them under the broiler until they brown well on the first side, 10-12 minutes. Turn them and cook on the other side until they reach an internal temperature of 140F, another 10-12 minutes. Remove them from the oven and let them rest 5 minutes.
