White Bean Salad With Garlic, Lemon And Parsley

Lemon juice, garlic and fresh parsley team up to complement the creamy, starchy white beans in this simple salad. Just about any other bean would work here too.
2 15-ounce cans white beans, rinsed and drained
1 clove garlic, minced
3 tablespoons fresh lemon juice
2 tablespoons olive oil
1/4 cup chopped fresh parsley
salt and pepper
