Grilled Corn With Thyme Butter
serves 2-4
Adding herbs to butter is an easy way to flavor your corn and grilling it inside its own husk makes the corn tender and creates a beautiful presentation. (Best served outdoors.)
2 teaspoons chopped fresh thyme
2 tablespoons unsalted butter, room temperature
salt and pepper
2 ears corn
prep: 25 minutes
total: 40 minutes

1. Mix the thyme, butter and a sprinkling of salt and pepper together in a small bowl.
2. Peel back the husk from the corn but leave it attached at the bottom. Remove and discard the silk. Soak the husks only in a bowl of water for 20 minutes.
3. Smear about two teaspoons of thyme butter on each ear of corn, leaving yourself a little extra to serve with the corn. Re-enclose the corn in the husks. Put the corn on the grill and cook, turning occasionally, 10-15 minutes.
