Roasted Sweet Potatoes With Cilantro-Lime Butter

2 sweet potatoes
1 tablespoon unsalted butter
1 lime, juiced
salt and pepper
2 tablespoons chopped fresh cilantro

1. Preheat the oven to 400F. Put the rack in the middle position.
2. Rinse the sweet potatoes well and put them directly onto the oven rack. Roast until a knife easily penetrates all the way through, 45-60 minutes.
3. Let the sweet potatoes cool slightly, then slice them into rounds and season lightly with salt and pepper.
4. Meanwhile, in a small saucepan, melt the butter over low heat. When it melts, take it off the heat and stir in the cilantro and lime juice to blend. Drizzle the cilantro-lime butter over the sweet potatoes and serve.
