unsalted butter
onion
head cabbage
salt and pepper
sherry vinegar
water

Braised Cabbage

Instructions:
Melt the butter in a large non-stick sauté pan, on the stove, over high heat. Add the onion and sauté for about 3 minutes, or until soft.

Slice the cabbage and add to the pan. Add the salt, pepper, vinegar and water. Stir with a large spoon and reduce the heat to medium. Cover and simmer until until the cabbage begins to soften, about 12 minutes. Add additional salt and pepper to taste.
