Braised Cabbage

2 tablespoons unsalted butter
1 medium onion, thinly sliced
1 head cabbage, thinly sliced
salt and pepper
3 tablespoons sherry vinegar
1/4 cup water

1. Melt the butter in a large sauté pan over medium-high heat. When the foam subsides and the butter begins to brown slightly, add the onion and sauté until it turns soft, 4-6 minutes.
2. Add the cabbage, a sprinkling of salt and pepper, the vinegar and the water. Stir to mix everything together, then cover and reduce the heat to medium-low. Cook until the cabbage is soft but still has texture, 10-15 minutes. Season to taste with salt and pepper.
