Sesame Green Bean Salad

1 pound green beans, trimmed and cut into bite-size pieces
1 green onion, white and tender green parts, thinly sliced
2 tablespoons rice wine vinegar
1 teaspoon soy sauce
1/4 teaspoon red pepper flakes
1 tablespoon canola oil
1 teaspoon sesame oil

1. Bring a large pot of water and 2 teaspoons salt to a boil. Meanwhile, prep the green beans and green onions.
2. When the water boils, add the green beans. Blanch them until they're bright green and barely tender, 2-4 minutes. Rinse them under cold water, and dry them.
3. Whisk together the green onions, rice wine vinegar, soy sauce, red pepper flakes and a sprinkling of salt and pepper. Drizzle in the canola oil and sesame oil in a thin stream, constantly whisking until the dressing is emulsified. Toss the beans with the dressing. Add more salt and pepper to taste.
