Ginger Miso Vinaigrette

serves 2-4

This is a very simple dressing with a Japanese twist.  It works well on salads, or as a marinade for fish or meat, and is best with a smooth miso unless you prefer bits of salty soybeans spicing up your dressing. 



ingredients

1 tablespoon minced ginger
fresh ground black pepper
2 tablespoons rice wine vinegar
1 tablespoon lemon juice
1 tablespoon miso paste
2 tablespoons canola oil

instructions

In a small bowl, combine the ginger, a sprinkling of pepper, rice wine vinegar, lemon juice and miso paste. Drizzle in the oil in a thin stream, whisking constantly until the dressing is emulsified. Add more pepper or miso to taste.
