Seared Sesame Tuna Steaks

2 (2-inch thick) fresh tuna steaks
salt and pepper
1/3 cup sesame seeds
2 teaspoons olive oil
1 tablespoon unsalted butter

total: 10 minutes
large nonstick sauté pan

1. Season the steaks on both sides with salt and pepper. Put the sesame seeds on a plate and press the steaks into the seeds to coat on both sides.
2. Heat the butter and the oil in a large nonstick sauté pan over medium-high heat. When the butter's foam has subsided, add the tuna steaks. Leave them alone to sear for 2 minutes (for rare) then turn the steaks and sear for 2 minutes on the other side. (For a medium steak, sear it for 3-4 minutes on each side.)
