Sauteed Okra

1 tablespoon vegetable oil
1 shallot, minced
2 cloves garlic, minced
1 pound okra, cut into halves or quarters

1. Heat the oil in a large sauté pan over medium-high heat. When it's hot and shimmering, stir in the shallot and cook until it lightly browns, 4-6 minutes.
2. Add the garlic and stir for 30 seconds. Add the okra and sauté, stirring occasionally, until the pods become crisp-tender and the bright green, 4-6 minutes.
