Braised Beet Greens With Vinegar

serves 2-4

Beet greens are perfect for braising. A longer simmer leaves them tender and flavorful.


1 teaspoon olive oil
1 clove garlic, minced
1/4 cup balsamic vinegar
1 pound beet greens, chopped
1/4 cup water
salt and pepper

total: 15 minutes

1. Heat the olive oil in a large sauté pan over medium heat. When it's hot and shimmering, add the garlic and cook, stirring constantly, for 1 minute.

2. Pour in the vinegar and heat through, about 2 minutes. Stir in the beet greens to coat with the vinegar and then add half the water. Bring to a simmer and braise for 4-5 minutes until tender, adding more water if the pan dries out too quickly. Season to taste with salt and pepper.
