Roasted Broccoli Raab

Roasting broccoli raab intensifies its flavor and brings out a sweetness that balances its bitter taste. Experiment with different oven temperatures here to bring out different flavors.
2 bunches (about 2 pounds) broccoli raab, stemmed and roughly chopped
1 tablespoon olive oil
3 cloves garlic, chopped
1 tablespoon fresh lemon juice

1. Preheat the oven to 400F.
2. Cut off and discard the tough end part of the broccoli raab's stems.
3. Toss the raab with the olive oil, garlic and lemon juice. Spread out the raab out on a roasting pan and sprinkle it with salt and pepper. Roast, turning once or twice with tongs, until it's tender, 15-20 minutes.
