Sauteed Chili Bok Choy

1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon chili powder
2 teaspoons vegetable oil
1/2 small onion, thinly sliced
1 clove garlic, minced
1 1/2 pounds of bok choy, coarsely chopped

1. Prep all the ingredients. Mix together the soy sauce, sesame oil and chili powder and set aside.
2. Heat the vegetable oil in a medium sauté pan over medium-high heat. When it's hot and shimmering, add the onion and cook, stirring often, until it softens and begins to brown, 6-8 minutes.
3. Stir in the garlic and cook for another minute. Add the bok choy and pour in the soy sauce mixture. Stir to combine, then let everything cook for 2 minutes without stirring.
4. Stir for another 1-3 minutes, until the bok choy is crunchy-tender.
