Roasted Cherry Tomatoes

Cherry tomatoes take less work to roast than peeled, seeded whole tomatoes, which can be cooked in the same way once prepped.
2 pounds cherry tomatoes
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons chopped fresh basil

total: 20 minutes

1. Preheat the oven to 400F.
2. In a medium bowl, toss the tomatoes with the oil, garlic and a sprinkling of salt and pepper.
3. Spread the tomatoes onto a baking sheet and drizzle any oil from the bowl over them. Roast until the tomatoes are soft and collapsing, 10-15 minutes.
4. Sprinkle with the basil and serve.
