Braised Broccoli Raab
serves 2-4
Here broccoli raab is simply braised in a little chicken broth (vegetable broth would also work), along with minced garlic and red pepper flakes that have been lightly toasted in olive oil. Be sure to trim away and discard the tough ends of broccoli raab's stems.
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon red pepper flakes
1 bunch broccoli raab, coarsely chopped
1/2 cup low-sodium broth (chicken or vegetable)

total: 20 minutes

1. Heat the oil in a medium sauté pan over medium heat. When it's hot and shimmering, stir in the garlic and red pepper flakes. Cook for about 1 minute, until the garlic is fragrant but not brown.
2. Stir in the raab and sauté for 3 minutes. Pour in the broth and simmer until the raab is tender, 5-7 minutes.
