Leftover Turkey Salad
serves 2-4
This is a great way to use up that extra Thanksgiving turkey - but it's good enough to warrant roasting a turkey breast just to have leftovers.
1/2 cup pecans
2 cups leftover turkey meat, diced
2 ribs celery, diced
3 tablespoons mayonnaise
1 cup seedless grapes, roughly chopped
1/2 teaspoon paprika
1/4 cup chopped fresh parsley

total: 15 minutes

In a small, dry skillet, toast the pecans over medium heat until they're brown in spots, 3-5 minutes. Let them cool briefly, and then chop them. In a medium bowl, combine all the ingredients and stir to blend well. Sprinkle lightly with salt and pepper to taste.
