Stir-Fried Shrimp With Red Bell Peppers And Ginger

1 pound shrimp, peeled
2 tablespoons soy sauce
1 teaspoon sugar
1 tablespoon rice wine vinegar
1 green onion, thinly sliced
1 tablespoon canola oil
2 medium red bell peppers, thinly sliced
1/2 teaspoon red pepper flakes
1 thumb ginger, minced

1. Prep all the ingredients. Peel the shrimp and keep them in the refrigerator until just before you're ready to use them. In a small bowl, whisk together the soy sauce, sugar, vinegar and green onion.
2. Heat the canola oil in a large sauté pan over high heat. When it's barely smoking, stir in the shrimp, peppers and ginger. Cook, stirring constantly, until the shrimp are pink, 2-4 minutes.
3. Give the sauce a quick whisk and then drizzle it into the stir fry. Cook until the sauce thickens and the shrimp are barely cooked through, 2-4 minutes.
