Toasted Brown Rice
serves 2-4
A quick toast in some butter brings out the nutty flavor of brown rice. This is a great base for other dishes like stir-fries, or to use the next day in fried rice.
1 tablespoon unsalted butter
1 cup brown rice
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

1. Melt the butter in a medium saucepan over medium-high heat. When the foam subsides, stir in the rice, salt and pepper. Cook, stirring often, until the rice smells toasty, 3-5 minutes.
2. Add 1 1/2 cups warm water to the rice, and bring to a boil. Cover and reduce the heat to a simmer. Cook until the rice is tender and has absorbed the water, 20-30 minutes. Set the rice aside, covered, 5 minutes before fluffing with a fork.
