Brown Rice

serves 2-4

1 cup brown rice
2 cups water
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1 tablespoon butter

1. Put the rice in a saucepan and cover it generously with cold water. Swish the rice around with your hand to rinse it. Repeat this with 2 or 3 changes of water. Pour off as much of the water as possible and add 2 cups of fresh water and a pinch of salt.

2. Cover the saucepan and bring the rice to a boil over high heat. Reduce the heat to low and simmer gently for 30-45 minutes depending on the variety of rice, until all the water has been absorbed and the rice is tender. (Adjust the heat so the rice simmers constantly but doesn't boil over.)

3. Remove the rice from the heat, keep it covered, and let it rest for 10 minutes. Fluff it with a fork before serving.
