Sesame Soba Noodles

1/2 pound soba noodles
1 green onion, white and tender green parts, thinly sliced
2 teaspoons rice wine vinegar
salt and pepper
1 teaspoon sesame oil

1. Bring a large pot of water and 2 teaspoons salt to a boil. Add the noodles. Simmer, stirring occasionally, until they're al dente, then drain.
2. Meanwhile, whisk the green onion, vinegar and a sprinkling of salt and pepper in a large bowl. Let these ingredients sit for 10 minutes. Whisk in the sesame oil. Toss the noodles with the dressing. Serve hot or cold.
