Mint Tzatziki

serves 2-4

Tzatziki is a Greek and Turkish meze that is often served alone with pita bread. It's also used as a condiment on sandwiches like gyros and shawarma. We even use it occasionally as a marinade and salad dressing.



ingredients

1 1/2 cup Greek yogurt
1 cucumber, peeled, seeded and finely chopped
1 clove garlic, minced
1 teaspoon white wine vinegar
10 mint leaves, thinly sliced
1 tablespoon olive oil
salt and pepper

prep: 15 minutes
total: 45 minutes

food processor (optional)

instructions

Put the yogurt in a large bowl. Stir in the cucumber, minced garlic, vinegar, mint and olive oil. Stir to combine and season to taste with salt and pepper. Refrigerate for at least 30 minutes, preferably overnight (or all day).
