Simple Pearled Barley

1 cup pearled barley
1 teaspoon butter
1/4 teaspoon kosher salt
1/4 fresh ground black pepper
2 cups water

total: 50 minutes

Rinse and drain the barley. In a medium saucepan with a tight-fitting cover, combine all the ingredients. Bring to a boil over medium-high heat, then cover the pot and reduce to a low simmer. Cook until the barley has expanded and become tender, 25-35 minutes. Remove the barley from the heat and let it sit 10 minutes, covered. Fluff with a fork before serving.
