Simple Mashed Potatoes

1 1/2 pounds starchy potatoes, peeled and cubed
salt and pepper
1/4 cup heavy cream
1 tablespoon unsalted butter

1. Put the potatoes in a medium saucepan and barely cover with water. Add a generous sprinkling of salt and pepper, and bring the potatoes to a boil over medium-high heat.
2. Reduce the heat and simmer the potatoes gently until they're tender pierced with a knife, 20-30 minutes.
3. Drain the potatoes in a colander and return them to the saucepan. Add the cream and butter and mash them until they are as smooth (or chunky) as you want. Season to taste with more salt and pepper.
