Roasted New Potatoes With Vinegar And Garlic

1 1/2 pounds new potatoes, halved
2 teaspoons olive oil
kosher salt and fresh ground pepper
2 teaspoons red wine vinegar
1 clove garlic, minced

1. Preheat the oven to 350F and put the rack in the middle position. In a large bowl, toss the potatoes with the olive oil and a generous sprinkling of salt and pepper.
2. Spread the potatoes onto a 8x14 baking sheet. Roast, tossing occasionally, until they're almost tender when a knife is inserted, 20-30 minutes. Increase the heat to 500F, toss the potatoes again, and roast until they have a brown crust, 10-15 minutes more.
3. While the potatoes are hot, toss them in a large bowl with the vinegar and the raw minced garlic. Add more salt and pepper to taste.
