Sauteed Shrimp With Tomato, Feta And Basil

1 pound shrimp, peeled and de-veined
1/2 pound ripe tomatoes, chopped
1 tablespoon olive oil
salt and pepper
1/4 teaspoon red pepper flakes
4 ounces feta, crumbled
10 basil leaves, thinly sliced

1. Prep the shrimp and tomatoes. (Keep the shrimp in the fridge until you're ready to use them). Season the shrimp lightly with salt and generously with fresh ground pepper.
2. Heat the olive oil in a large sauté pan over medium-high heat. When it's hot and shimmering, add the shrimp. Leave them alone to brown on the first side, 2-3 minutes. Turn them over and brown on the second side for 1 minute.
3. Add the tomatoes and season them with a light sprinkling of salt, pepper, and the red pepper flakes. Cook until the tomatoes break down and thicken, 2-3 minutes. Remove the pan from the heat and stir in the feta and basil.
