Grilled Lamb Chops

For an elegant alternative to burgers, grill a few beautiful lamb chops. This is the simplest dish possible, letting all the meat's natural flavors come through. Lay several sprigs of fresh sage on the grill and cook the chops on top of them for a smoky, herbed variation.
vegetable oil (for the grill)
4 lamb rib (or loin) chops
olive oil (for the lamb)
salt and pepper
prep: 20 minutes
total: 35 minutes
grill (gas or charcoal)
grill brush

digital instant-read meat thermometer
2. Lightly coat the chops with olive oil and season them on both sides with salt and pepper. Put them on the medium high-heat side of the grill and leave them alone to brown well on the first side, 3-5 minutes. (Exactly how long will depend on the temperature of your grill.) Turn the chops and grill them on the other side for 3-5 minutes.
3. Check the internal temperature of the chops. You want to take them off the grill when they reach 135F for medium-rare.
4. If the chops are not yet done, move them to the edge of the grill away from the direct heat. When they're done, remove them to a clean plate and let them rest 5 minutes.
