Broiled Sea Bass With Miso

This is a simple and flavorful treatment for fish filets. If your miso isn't spreading easily, add a little oil and stir to combine.
2 thick sea bass filets
1/4 teaspoon fresh ground black pepper
2 teaspoons miso paste
1 teaspoon canola oil

1. Preheat the broiler to high and place a baking sheet on a rack 6-8 inches from the heat source. Dab the sea bass with a paper towel to dry. Season with pepper on both sides. Mix the miso paste briskly to make it spreadable, and put a thin later on top of the filets.
2. Lightly oil the preheated baking sheet. Place the fish on the baking sheet, miso-side up, and broil until it's cooked through and almost opaque in the center, 6-8 minutes.
