American Meat Loaf
serves 4-6
A classic meatloaf can warm the heart as well as the belly - making this one in the center of a baking dish instead of a loaf pan gives it that wonderfully crispy crust all over, and lets some of the fat run off.
2 cups breadcrumbs
1 medium onion, finely chopped
3 tablespoons chopped fresh parsley
2 pounds ground beef
2 tablespoons Worcestershire sauce
1 1/2 teaspoons dry mustard
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
3/4 cup milk
prep: 10 minutes
total: 45 minutes

1. Preheat the oven to 350F. Prep the onion and parsley.
2. With your hands, mix together all of the ingredients in a large bowl. Mix gently and only enough to combine; too much mixing will toughen and dry out the loaf.
3. Lightly oil the baking dish. In the center of the dish, form the mixture into a loaf shape, leaving at least 1 inch between the sides of the loaf and the sides of the dish. (This gives you more surface area for a crisper loaf.)
4. Bake, uncovered, for 35 minutes. Let the loaf cool for 5 minutes before slicing.
