Mushroom, Arugula And Pecorino Salad

serves 2-4

Spicy arugula is perfect for a mushroom and pecorino combination with a lemon-oil dressing. This is a salad that goes well with nearly everything and lightens up a heavy meal. 


1 pound white mushrooms, thinly sliced
1/2 pound arugula, rinsed and dried
4 ounces pecorino, shaved
3 tablespoons olive oil
2 tablespoons lemon juice
salt and pepper

In a large bowl toss together the mushroom slices, arugula and shaved pecorino. In a small bowl, whisk together the olive oil and lemon juice. Add it to the salad a little at a time, tossing, tasting and adding more as needed until everything is lightly coated and tastes good. Add salt and pepper to taste.
