1/2 pound spaghetti
3 tablespoons olive oil
3 cloves garlic, thinly sliced
salt and pepper
3 tablespoons chopped fresh parsley
prep: 5 minutes
total: 20 minutes
large pot
large sauté pan
tongs
1. Bring a large pot of water and 2 teaspoons salt to a boil. When the water boils, add the pasta and cook until al dente. Reserve 1/2 cup of the pasta water.
2. Meanwhile, combine the olive oil, garlic and a light sprinkling of salt and pepper in a large sauté pan. Heat the pan over medium-low heat. Sauté the garlic until it smells good and turns a very light brown (but don't let it turn dark brown or it will become bitter).
3. Drain the pasta and add it to the oil and garlic. Toss to combine everything, then stir in the parsley and serve.
