Indian Style Beef And Sweet Potatoes

serves 2-4

Yogurt and cilantro lighten up this sweet and rich dish, and the combination of beef and sweet potato are perfect together.  Toss this on top of greens or grain for a one-bowl meal.



ingredients

1 pound beef (chuck or round roast), cut into 1-inch cubes
1 small onion, thinly sliced
3 cloves garlic, minced
2 teaspoons vegetable oil
salt and pepper
2 teaspoons ground fennel
2 teaspoons ground cumin
1 small sweet potato, peeled and cut into 1/2-inch cubes
1 cup low-sodium chicken broth
2 tablespoons plain yogurt
1/2 cup chopped fresh cilantro

instructions

1. Prep all the ingredients. Season the beef generously with salt and pepper. Heat the oil in a large sauté pan over medium heat. When it's hot and shimmering, add the onions and season with a generous sprinkling of salt and pepper. Cook until the onions are soft, 4-6 minutes.

2. Stir in the garlic and cook 1 minute. Stir in the ground fennel and cumin, and cook until the spices become fragrant, 2-4 minutes.

3. Add the beef, sweet potatoes and broth to the pan. Stir to combine everything, then cover and bring to a simmer. Turning down the heat if you need to, gently simmer until the sweet potatoes are tender and the beef is cooked through, 15-25 minutes.

4. When the beef and sweet potatoes are done, turn the heat off (but leave the pan on the burner) and stir in the yogurt until it heats through, 2 minutes. Stir in the cilantro and season to taste with salt and pepper.
