Steamed Artichokes

2 large artichokes, trimmed
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 clove garlic, peeled
salt and pepper

1. Stand the trimmed artichokes up in a large saucepan. Fill the pan with 2 inches of water, the olive oil, lemon juice, garlic clove and a sprinkling of salt and pepper.
2. Bring the water to a simmer over medium heat and cover the pot. Steam the artichokes until the outer leaves pull away easily, 30-45 minutes. Every now and then check to be sure the water hasn't evaporated. If it has, add more.
3. Serve the artichokes with a dipping sauce.
