Sauteed Mustard Greens With Garlic
serves 2-4
Minced garlic and sherry vinegar are all you need to add a bit of zing and tang to mustard greens sautéed in olive oil. Be sure to mince the garlic as finely as possible for the best result.
1 tablespoon olive oil
2 cloves garlic, minced
2 pounds mustard greens, stemmed and coarsely chopped
2 teaspoons sherry vinegar

1. Heat the olive oil in a large sauté pan over medium heat. When the oil is hot and shimmering, stir in the garlic and cook for 30 seconds. Start adding the greens in a little at a time and stir to coat with the oil and garlic. Sprinkle lightly with salt and pepper. Continue to cook, stirring often, until the greens are wilted and bright green, about 10 minutes.
2. Take the pan off the heat and stir in the vinegar.
