Basic Couscous
serves 2-4
A simple couscous is a blank canvas, waiting to be painted with spices, herbs, fruits - you name it. Try it with raisins and cinnamon, or chile pepper and sauteed green peppers. It's up to you.
1 1/2 cups water
salt and pepper
1 cup couscous
prep: 15 minutes

1. Put the water and pinch of salt in a medium saucepan and bring it to a boil over high heat.
2. Stir in the couscous, cover immediately, and remove the pan from the heat. Let it rest, covered, 10 minutes or until the liquid is completely absorbed. It's fine to keep it covered up to 30 minutes before serving.
3. Fluff the couscous with a fork and add salt and pepper to taste.
