Green Salad With Garlic And Pine Nut Dressing

With the addition of toasted pine nuts and a minced garlic dressing, a simple green salad is transformed into something luscious.

1/3 cup pine nuts
1 large garlic clove, minced
1 pinch crushed red pepper flakes
2 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
8 cups (about 12 ounces) washed mesclun
1/4 cup fresh parsley leaves, washed and dried

1. Toast the pine nuts. This can be done by heating a small skillet over high heat for 2 minutes, turning the heat down to low, adding the pine nuts and stirring until the pine nuts color, about 2 minutes. Or by placing the pine nuts in microwave safe pie plate or flat dish and microwaving at full power for 3 minutes, stirring every minute.
2. In a salad bowl mix the garlic with the red pepper flakes, salt, pepper, wine vinegar and olive oil. Toss in the lettuces, parsley and toasted pine nuts.
