Baked Potatoes With Basil Butter

An ordinary baked potato tastes like something special with the addition of fresh basil butter melting over its fluffy insides.
This recipe is part of Andrew Schloss's Sunday Dinners.
8 large (about 5 pounds) russet or Yukon Gold potatoes
1 tablespoon vegetable oil
4 tablespoons chopped fresh basil leaves
1 teaspoon garlic, pressed or minced
3 tablespoons olive oil
4 tablespoons butter, softened
prep: 10 minutes
total: 1 hour 10 minutes

1. Preheat oven to 375F.
2. Scrub dirt from potato skins and rub with a light film of vegetable oil. Bake in oven until tender, for about an hour.
2. Cook the basil leaves and garlic in the olive oil until wilted, about 30 seconds. Mix into the butter and season liberally with salt and pepper. Serve butter alongside the baked potatoes.
