Stir-Fried Spinach And Capers

Simple stir-fried spinach gets an extra bite with minced garlic, crushed red pepper flakes and tangy capers.
This recipe is part of Andrew Schloss's Sunday Dinners.
1 tablespoon olive oil
2 pounds fresh spinach, stems removed and thoroughly washed
2 cloves garlic, minced
1 pinch crushed red pepper flakes
2 tablespoons capers
prep: 5 minutes
total: 10 minutes
wok or skillet
1. Over high heat, heat a large wok or skillet for 1 minute.
2. Add the oil and the spinach and stir until the spinach wilts, about 1 minute.
3. Add the garlic, red pepper, a sprinkling of salt and black pepper and capers. Stir and transfer to a serving plate.
