Spinach Salad With Feta Dressing
makes 1 1/2 cups of dressing
A Greek-inspired version of blue cheese dressing made with feta is the perfect accompaniment to baby spinach, or drizzled over Romaine, cucumbers, bell peppers or tomatoes. If using plain yogurt, decrease the milk by 1/4 cup.
1 tablespoon sherry vinegar
1 teaspoon hot sauce
2 teaspoons minced shallot
1 teaspoon chopped oregano
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/2 cup Greek yogurt
1/2 cup feta, crumbled
1/2 cup whole milk
3 tablespoons olive oil
1 pound baby spinach, washed and dried

1. In the large mixing bowl, combine the sherry vinegar, hot sauce, minced shallot, oregano, sea salt and black pepper; let sit for 5-10 minutes while prepping the rest of the recipe.
2. In the smaller mixing bowl, crush the Greek yogurt together with the crumbled feta using the back of a fork to make a paste; it will be lumpy. Whisk in the milk and the olive oil and then add the sherry vinegar mixture.
3. Toss the leaves with 1/2 cup of the dressing, adding more if necessary to taste.
