Sparkling Margarita
makes 1 (64-ounce) pitcher
This refreshing margarita is perfect for a weekend grilling session. The tart lime flavor is balanced with agave syrup and light beer is the secret ingredient that makes it sparkle. The sour mixture can be made up to 3 days in advance and kept refrigerated.
For the sour mix:
1 cup freshly squeezed lime juice
1 cup freshly squeezed lemon juice
2 tablespoons lime zest
1 cup light agave nectar
2 cups water
1/4 teaspoon salt
For the margarita:
2 (12-ounce) light beers, American lager-style
12 ounces gold tequila
4 ounces Cointreau
Salt and lime wedges for garnish

1. In a medium saucepan, make the sour mix: combine the juices, zest and agave nectar and bring to a boil over medium heat. Cook for 5 minutes.
2. Remove from heat, strain into the pitcher, add the water and salt, let cool and refrigerate until needed.
2. Add beer, tequila and Cointreau to the sour mix and stir vigorously. Serve immediately over ice with lime wedges in salt-rimmed glasses.
