Sauteed Bell Peppers And Green Peas

Use frozen peas to make this colorful, fresh vegetable side dish made with red and yellow bell peppers and flavored with onion, garlic and fresh thyme.

1/2 onion, chopped
1 tablespoon extra-virgin olive oil
1 red bell pepper, stemmed, seeded and diced
1 yellow bell pepper, stemmed, seeded and diced
2 cloves garlic, minced
1/2 teaspoon dried thyme leaves
1 1/4 pounds frozen peas, defrosted

1. In a skillet cook the onion in the oil over moderate heat until softened.
2. Add the red and yellow bell pepper and cook for 2 more minutes.
3. Add the garlic, thyme and peas and heat through.
