Chilled Flip

1 1/2 ounces brandy (or sherry, port or rum)
1 small egg
1 teaspoon superfine sugar
1/2 ounce cream (optional)
Freshly ground nutmeg

In a cocktail shaker, strongly shake the ingredients with ice to emulsify the egg. Strain into a cocktail or wine glass. Garnish with fresh nutmeg.
