London Broil In A Brandied Pepper Crust

London broil is a marketing term originally devised to help sell flank steak, and now means any boneless cut of steak.

1/2 tablespoon cracked black pepper
1 teaspoon brandy
1 pound London broil from round or flank steak
1 teaspoon extra-virgin olive oil
prep: 10 minutes
total: 45 minutes, plus overnight to chill marinade

1. Mix the cracked pepper with the brandy and set aside for at least 20 minutes, or preferably overnight.
2. Rub both sides of the London broil with salt to taste. Press the brandied pepper into one side of the meat.
3. Grill the meat 4 inches from a high fire for 8 minutes per side, starting with the side that has no pepper.
4. Transfer meat to a cutting board, drizzle with the oil and allow to rest for 5 minutes. Slice the meat in thin slices against its grain.
